Vegan Cobbler Cake

Gather Ingredient For the Cake: 1 1/2 cups all-purpose flour, 1 cup sugar, 1/2 cup vegetable oil, 1 cup non-dairy milk, 1 tsp vanilla extract, 1 tbsp apple cider vinegar, 1 tsp baking powder, 1/2 tsp baking soda, 1/4 tsp salt.

Preheat Oven Preheat your oven to 350°F (175°C). Grease and flour an 8x8-inch baking pan or line with parchment paper.

Prepare Fruit Topping In a bowl, toss the fruit with sugar, cornstarch, and cinnamon until evenly coated. Set aside.

Mix Wet Ingredient In a large bowl, whisk together non-dairy milk, vegetable oil, vanilla extract, and apple cider vinegar.

Combine Dry Ingredient In another bowl, whisk together flour, sugar, baking powder, baking soda, and salt.

Mix Wet and Dry Ingredient Add the dry ingredients to the wet ingredients and stir until just combined. The batter will be thick.

Assemble Cake Pour the batter into the prepared pan and spread it evenly. Spoon the fruit mixture over the top of the batter.

Bake Bake for 35-40 minutes, or until a toothpick inserted into the center comes out clean and the top is golden brown.

Cool and Serve Allow the cake to cool slightly before serving. Enjoy warm with a scoop of vegan ice cream or a dollop of vegan whipped cream.
