The Best Avocado Deviled Eggs

Ingredients  

– 6 large hard-boiled eggs, peeled and cut in half lengthwise – 1 small avocado, halved and peeled – 3 tablespoons thinly sliced fresh chives, divided – 2 tablespoons light mayonnaise – 1 tablespoon lime juice – 1 teaspoon Dijon mustard

– 1/4 teaspoon paprika – 1/4 teaspoon salt – 2 tablespoons cooked 1/4-inch strips center-cut bacon (from 1 slice; optional) – 1 1/2 tablespoons sliced pickled red onion – Crushed red pepper for garnish (optional)

Carefully scoop out the egg whites with a spoon; Place the pumpkin in a sturdy bowl. Put half of the egg whites on a large plate.

Directions

In the bowl with the mashed potatoes, add the avocado, 2 tablespoons chives, mayonnaise, lime juice, mustard, paprika, and salt.

Beat with a full bowl until smooth.

Divide the egg mixture, evenly, among the egg white halves.

Top each potato with half of the bacon, if using, the chopped red onion and remaining 1 tablespoon chives.

Sprinkle with crushed red pepper, if desired.
