Stuffed Tomato with Pesto and White Beans 

This is a light, easy three-ingredient meal that will be perfect for a light lunch or snack.  

With only five minutes of preparation, this meal is healthy, flavorful, and an ideal showcase for July's fresh tomatoes and pesto.  

Ingredient

– 1 large tomato – ¼ cup canned white beans, rinsed – 2 teaspoons pesto – Torn fresh basil for garnish

Direction

Using a spoon, cut the tomato in half lengthwise and scoop out the seeds. Fill with beans, spoon pesto on top, and sprinkle with salt.  

Garnish with basil, if desired.
