Hearty yet easy to make, this Black Bean and Kale Stuffed Sweet Potato with Hummus dressing is a great 5-ingredient lunch for one!
– 1 large sweet potato, scrubbed – ¾ cup chopped kale – 1 cup canned black beans, rinsed – ¼ cup hummu – 2 tablespoons water
Use a fork to prick sweet potatoes all over. Microwave on High for 7 to 10 minutes until thoroughly done.
Meanwhile, wash and drain the kale, leaving water clinging to the leaves. Put in a medium saucepan, cover, and cook over medium-high heat, stirring once or twice, until wilted.
Add the beans; if the pot is dry add a tablespoon or two more water. Cook, uncovered, stirring frequently, until steaming hot, about 1 to 2 minutes.
Fill sweet potato with the kale and bean mixture. In a small bowl, whisk together the hummus and 2 tablespoons water until smooth.
Add additional water if desired for consistency.
Spoon hummus dressing over the sweet potato.
