8 large eggs
1/4 cup half-and-half
1/2 cup of chopped baby spinach
1/4 cup of crumbled feta cheese
2 tsp of chopped fresh dill, plus more for garnish
1/4 teaspoon salt
Directions
Cover 4 microwave-safe cups with kitchen spray. Crack 2 eggs into each prepared bowl.
Add 1 teaspoon half and half to each; Mix with a fork until completely mixed.
Add 2 teaspoons spinach, 1 teaspoon feta, and 1½ teaspoons dill to each bowl, stirring until combined. Sprinkle with salt.
Sprinkle with salt. Cover and refrigerate for up to 4 days.
To serve, open bowl and microwave on high, every 15 to 20 seconds, until set, 1 minute 15 seconds to 1 minute 25 seconds
Stir large yogurts Stir with a fork to melt soft yogurt. Sprinkle with additional fennel if desired.
