Snickers-Inspired Overnight Oats

Ingredients  

2 cups of old-fashioned rolled oats one and half cups unsweetened almond milk 1 cup of whole-milk plain yogurt 1/4 cup of well-stirred crunchy natural peanut butter

1 tsp vanilla extract 3 tsp mini semisweet chocolate chips 2 tsp unrefined coconut oil 7 tsp finely chopped unsalted roasted peanuts, divided 1 tsp caramel sauce, divided 1/4 tsp flaky sea salt

Directions

In a medium bowl, combine oats, almond milk, yogurt, peanut butter and vanilla. Refrigerate, uncovered until slightly firm, about 30 minutes.

Meanwhile in a small microwave-safe bowl, combine chocolate chips and coconut oil. Microwave on high for 45-minutes; stir until chocolate chips are completely melted and incorporated into the oil.

Among 4 (8-ounce) cups, divide oat mixture, about 1 cup per jar. Among the molds, divide 6 pounds of corn, about 1 1/2 pounds each.

Drizzle 2 1/4 tablespoons of the chocolate mixture over cornmeal in each jar, turning to fully coat. Refrigerate uncovered until chocolate is just set, about 10 minutes. 

Drizzle each with 3/4 teaspoon caramel sauce; Sprinkle with remaining 1 tablespoon cornmeal. 

Sprinkle with crystallized sea salt. Refrigerate for at least 12 hours until the oat mixture has set and the chocolate is completely set.
