This healthier fruit smoothie recipe combines the classic piña colada flavors of pineapple and coconut with the sweet touch of mango.
You'll feel like you're on the beach with one sip.
– 1 cup nonfat plain Greek yogurt – ¾ cup frozen pineapple – ¾ cup frozen mango – ½ cup "lite" coconut milk (see Tip) – Unsweetened coconut flakes for garnish
Puree yogurt, mango, pineapple, and coconut milk in a blender until smooth. Serve with toasted coconut flakes if desired.
Tip: Freeze leftover coconut milk for up to two months or refrigerate for a week.
It will appear separated when it thaws; just stir until smooth.
