Simple Dip for Black Beans 

This creamy bean dip is perfect for a picnic or any time a group of friends gets together.  

If you're out of the smoked paprika and ground chipotles, substitute with standard paprika and cayenne. Smoked paprika and ground chipotles bring such a deep earthy flavour. 

Ingredient

– 1 (15 ounce) can low-sodium black beans, rinsed – ¼ cup low-fat plain Greek yogurt – 2 teaspoons lime juice (from 1 lime) – ½ teaspoon ground cumin – ½ teaspoon dried oregano – ½ teaspoon garlic powder

– ¼ teaspoon paprika, preferably smoked – ¼ teaspoon salt – ¼ teaspoon ground pepper – ¼ teaspoon cayenne pepper or ground chipotle chile (Optional) – 2 teaspoons olive oil – ¼ cup chopped fresh cilantro or scallion – ¼ cup chopped onion

Direction

in a blender or food processor combine beans, yogurt, lime juice, cumin, oregano, garlic powder, paprika, salt and pepper. Process until well combined, about 20 seconds total. 

Add up to 1/4 teaspoon ground chipotle or cayenne, to taste, for a spicier dip. Add the oil, onion and cilantro (or scallions). Pulse until well combined, about 20 seconds total. Transfer to a bowl before serving.

Serving Suggestions: Serve this with whole-grain tortilla chips, sliced zucchini, or sliced red bell peppers.
