– 2 boneless, skinless chicken breast – 8 oz pasta (penne, fettuccine, or your choice) – 1 tbsp olive oil – 1 small onion, chopped – 2 cloves garlic, minced – 1 cup Boursin cheese (garlic & herb flavor) – 1/2 cup chicken broth – 1/2 cup heavy cream
Cook your favorite pasta according to the package directions until al dente. Drain and set aside for later use.
Season chicken breasts with salt and pepper. Heat olive oil in a skillet and cook chicken until golden brown and cooked through. Slice into strips.
In the same skillet, sauté chopped onion until soft and translucent. Add minced garlic and cook for an additional minute.
Add Boursin cheese (garlic & herb flavor) to the skillet. Stir until the cheese melts and blends with the onions and garlic.
Pour in chicken broth and heavy cream. Stir well and let simmer until the sauce thickens slightly.
Incorporate fresh baby spinach into the sauce and cook until wilted, adding color and a nutritional boost.
Mix the cooked pasta into the sauce, tossing to ensure the pasta is well-coated and combined with the creamy sauce.
Add sliced chicken to the pasta and sauce, stirring to combine all ingredients thoroughly.
Season with salt and pepper to taste. Garnish with grated Parmesan cheese if desired. Serve warm and enjoy your easy weeknight dinner!
