Roasted Vegetable and Hummus Pita Pockets: A Flavorful Vegetarian Delight

These filling, flavorful pita-pocket sandwiches are stuffed with roasted vegetables and greens. Hummus adds richness and keeps everything together. 

Ingredient

– 1 6 1/2- inch whole-wheat pita bread – 4 tablespoons hummu

– ½ cup mixed salad green – ½ cup Sheet-Pan Roasted Root Vegetables, roughly chopped – 1 tablespoon crumbled feta cheese

Direction

Split the pita bread in half. Spread 2 tablespoons of hummus into each pita pocket half.  

Fill each pita pocket with roasted veggies, greens, and feta.
