Raspberry Lemon Overnight Oats

These Raspberry Lemon Overnight Oats combine rolled oats, yogurt, protein powder, lemon juice and fresh raspberries for a healthy, easy-to-make-ahead protein-packed breakfast

– ½ cup old fashioned rolled oats – ½ cup unsweetened almond milk or oat milk – ¼ cup of full fat plain Greek yogurt or vegan yogurt – 1 Tablespoon vanilla protein powder 

Ingredients  

– 1 teaspoon chia seeds – 1 teaspoon lemon zest – ½ teaspoon pure maple syrup – ¼ cup fresh raspberries, plus more for topping

Directions

In a bowl or jar, add oats, milk, yogurt, protein powder, chia seeds, lemon juice and maple syrup and combine. 

Gently stir the raspberries. Cover and refrigerate overnight. 

If you are in a hurry, you can reduce the soaking time to 2-4 hours.

The next morning (or when you are ready to eat), remove the lid and give the oats a great stir. 

If it seems too thick, you can add a little more milk to make the mixture smoother. Serve with another raspberry.
