Poached Eggs Caprese

Ingredients Eggs, tomatoes, fresh basil, olive oil, balsamic glaze, salt, pepper.

Step 1:  Simmer water with a splash of vinegar. Crack eggs into water and cook until whites are set, about 3-4 minutes.

Step 2:  Slice tomatoes and season with salt and pepper.

Step 3:  Arrange tomato slices on a serving plate. Drizzle with olive oil.

Step 4:  Tear fresh basil leaves and sprinkle over the tomatoes.

Step 5:  Carefully place poached eggs on top of the tomatoes and basil.

Step 6: Add a balsamic glaze drizzle over the eggs.

Step 6: Adjust seasoning with additional salt and pepper if needed.
