These triple-purpose English muffins are great as a snack or part of a tasty breakfast or lunch with their pizza-like topping of tomato, cheese, olives, and oregano.
– 1 whole-wheat English muffin, split and toasted – 1 medium tomato, sliced
– 1 tablespoon sliced green olive – 2 tablespoons shredded mozzarella cheese – ⅛ teaspoon dried oregano
Place half of the tomato slices, cheese, oregano, and olives on top of each half of an English muffin.
Broil for two minutes or until cheese is melted.
