Pistachio and Peach Toast: A Sweet and Nutty Delight.

This breakfast is perfect for using up leftover ricotta cheese, and it takes only 5 minutes to prepare.  

Ingredient

– 1 tablespoon part-skim ricotta cheese – 1 teaspoon honey, divided – ⅛ teaspoon cinnamon – 1 slice 100% whole-wheat bread, toasted – ½ medium peach, sliced – 1 tablespoon chopped pistachio

Direction

In a small bowl, combine ricotta, 1/2 teaspoon honey, and cinnamon.  

Spread the ricotta mixture on the toast and garnish with peaches and pistachios.  

Drizzle with the remaining 1/2 teaspoon of honey.
