Nachos with Greek Salad 

Combine two of your favorite foods-Greek salad and nachos-in this tasty vegetarian dish. It's brimming with all the classic fresh veggies of a Greek salad, creamy hummus, and salty feta cheese, but instead of tortilla chips like in traditional nacho recipes, it uses whole-grain pita chips. 

Best of all, there's no oven required! This would make a nice light meal or appetizer and is easily doubled.  

Ingredient

– ⅓ cup prepared hummu – 2 tablespoons extra-virgin olive oil – 1 tablespoon lemon juice – ¼ teaspoon ground pepper – 3 cups whole-grain pita chip – 1 cup chopped romaine lettuce

– ½ cup quartered grape tomatoe – ¼ cup crumbled feta cheese – 2 tablespoons chopped Kalamata olive – 2 tablespoons minced red onion – 1 tablespoon minced fresh oregano

Direction

Whisk together hummus, oil, lemon juice and pepper in a small bowl. On a serving dish spread in a single layer the pita chips 

Over the chips, pour about 3/4 of the hummus mixture.  

Top with feta, olives, red onion, tomatoes, lettuce and olives. Sprinkle oregano over the top and dollop the remaining hummus mixture over top.
