Start with 200g of udon noodles, boiled according to package instructions. Drain and set aside.

Step 2: Heat 2 tablespoons of vegetable oil in a pan over medium-high heat.–
Step 3: Add 1 cup of sliced onions and sauté until they become translucent and slightly caramelized.
Step 4: Toss in 1 cup of sliced bell peppers and 1 cup of julienned carrots. Cook for 3-4 minutes.–
Step 5: Stir in the kimchi and cook for another 2 minutes to let the flavors meld together.

Step 6:– Season with 2 tablespoons of soy sauce and 1 tablespoon of gochujang (Korean chili paste) for an extra kick.–
