Preheat oven to 400°F (200°C).
Step:1 Wash and peel carrots; slice them lengthwise.
Step:2 In a bowl, mix honey, balsamic vinegar, olive oil, salt, and pepper.
Step:3 Toss carrots in the honey balsamic mixture.
Step:4 Spread carrots evenly on a baking sheet.
Step:5 Roast in the oven for 25-30 minutes.
Step:6 Stir halfway through for even roasting.
Step:7 Remove when carrots are tender and caramelized.
Garnish with fresh herbs and serve warm!
