High-Fiber Dragon Fruit and Pineapple Smoothie Bowl for Tropical Nourishment

This vibrant, high-fiber smoothie bowl is as delicious as it is stunning. Dragon fruit brings colour but not a lot of flavor, so the other ingredients shine through.  

Pineapple feels especially pretty when paired with a sprinkle of pepitas and bee pollen. The texture of this easy smoothie bowl is uniquely set apart with fizzy kombucha.  

Ingredient

– 1/3 cup unsweetened almond milk – 2 tablespoons chia seed – 1 cup frozen pineapple chunk

– 3 ounces pink dragon fruit flesh (from about 1 pink-fleshed dragon fruit) – 1/4 cup kombucha – 1/4 cup sliced fresh pineapple – 1 1/2 teaspoons unsalted raw pepita – 1 teaspoon bee pollen (optional)

Direction

In a serving bowl, combine the almond milk and the chia seeds. Refrigerate for about 15 minutes, whisking every 7 minutes.

In a blender, combine frozen pineapple, dragon fruit, and kombucha. Blend on High for about 1 minute, or until smooth.

Push the chia mixture to one side of the bowl. Pour the smoothie into the open side. Top with pepitas and sliced pineapple. If desired, add some bee pollen.
