This Healthier Air-Fried Po' Boy offers a lighter take on the traditional sandwich by using an air fryer to achieve that perfect crispy texture without deep frying. Whether you opt for shrimp, oysters, or even a vegan protein like tofu, this recipe allows you to enjoy all the flavors of a Po' Boy with less oil and fewer calories. 

Ingredient – 1 pound shrimp, oysters, or tofu (pressed and sliced into strips) – 1/2 cup buttermilk (or dairy-free milk for a vegan option) – 1 cup whole wheat or panko breadcrumb – 1/2 teaspoon garlic powder – 1/2 teaspoon smoked paprika

– 1/4 teaspoon cayenne pepper (optional, for extra spice) – Salt and pepper to taste – Cooking spray or olive oil – 4 whole grain baguettes or sub roll – Lettuce leaves, sliced tomatoes, pickles, and sliced red onions for serving

Remoulade Sauce – 1/2 cup Greek yogurt (or vegan mayo) – 1 tablespoon Dijon mustard – 1 tablespoon capers, chopped – 1 teaspoon hot sauce

– 1 teaspoon lemon juice – 1/2 teaspoon smoked paprika – Salt and pepper to taste
