This distinctive vegetable side dish recipe is enhanced by the addition of fresh mozzarella cheese, basil, and a balsamic drizzling, which are layered into the tomato after a partial cut
– 4 medium tomatoes, cored – 3 ounces fresh mozzarella, thinly sliced into 16 piece – 16 fresh basil leave
– ¼ teaspoon salt – ¼ teaspoon ground pepper – 2 tablespoons extra-virgin olive oil – 1 tablespoon balsamic glaze (see Tip)
Cut each tomato, on a cutting board with inside facing down. Make eight cuts down each tomato, almost to the bottom but not quite all the way to the bottom or core. Place on serving plate carefully.
Stuff with mozzarella and basil alternately in each cut. Sprinkle salt and pepper. Drizzle balsamic glaze and oil over.
Note: Balsamic glaze is a reduction of balsamic vinegar. It can be found in well-stocked supermarkets with other vinegars.
