– 8 medium-size potatoes– 1 tbsp garlic paste– 2 tbsp butter– ⅓ cup vegetable oil– Salt and freshly ground black pepper
Directions
Preheat oven at 200C/400F. Clean the potatoes under running cold water.
Prepare a tray of bread loaves by spraying them or lining them with parchment paper.
Place the potatoes on a cutting board, holding them between your thumb and forefinger, and use a sharp knife to cut the potatoes about 4 mm wide (vertical).
Make sure not to cut all the way. You can also cut the potatoes with wooden spoons and hold them lengthwise on both sides. This didn’t make it all the way.
Place the potatoes on a baking tray
In a small bowl, add olive oil, melted butter, garlic paste, salt and pepper and mix to combine.
Brush the marinade over the potatoes and all over the sliced potatoes. Place in the oven and bake for 40 minutes.
Remove from the oven and baste with more garlic butter mixture, return to the oven and bake for another 15 to 20 minutes or until well done and crispy on the edges.
