Grilled Sweet Potatoe Wedges

Ingredients  

– 3 large sweet potatoes, scrubbed well – 1 Tablespoon olive oil – 1 Tablespoon fresh thyme, chopped  – 1/2 teaspoon sea salt – 1/4 teaspoon ground pepper

Directions

Place the potatoes in a large pot, cover with cold salted water and then bring to a boil. 

Pierce with a knife or sharp fork and fry until slightly resistant, about 10 minutes depending on size. Drain well and let cool.

Once cool, slice the potatoes in half lengthwise and slice into strips.

In a small bowl, whisk together the olive oil, thyme, salt and pepper. Brush this mixture over sweet potatoes.

Heat grill to medium-high high grill rack with a small amount of oil and grill potatoes until grill marks appear.

Potatoes are cooked, flipping once.  This should take about 7-8 minutes. 

Serve the wedge with dipping sauces like ketchup, mustard or homemade garlic aioli.
