Playful frog-faced cupcakes are great for a child's birthday party.
– 1 (15.25 ounce) package white cake mix – 1 ¼ cups water – ½ cup vegetable oil – 4 large egg white
– 1 (16 ounce) can prepared vanilla frosting – 6 drops green food coloring, or as needed – 12 marshmallow – ¼ cup green decorator sugar – 48 semisweet chocolate chip – 1 drop red food coloring
Preheat oven to 350°F (175°C). Line two 12-cup muffin tins with paper liners.
With an electric mixer, beat cake mix, water, oil, and egg whites in a large bowl on low speed until moistened, then on medium speed 2 minutes. Fill muffin cups half full with batter.
Bake in preheated oven 19–23 minutes or until tops spring back when softly touched. Let tins cool for 5 minutes, then transfer to wire rack to cool completely 20 minutes.
While cupcakes are cooling place 2/3 of frosting in a small bowl and mix with green food colouring. Place remaining frosting in second small bowl. Cut marshmallows in fourths width wise to make four thin rings. Place green sugar in shallow basin. Place water in a small bowl.
Green frosting and green sugar top cooled cupcakes. Once half of each marshmallow circle is wet with the water, coat it with green sugar. Place two dipped marshmallows on top of each cupcake for the frog's eyes and green sugar for the eyelids.
Place a chocolate chip in the middle of each marshmallow for the pupils with a little white icing.
Colour the white frosting with red food colouring. Place in plastic. To pipe pink icing on cupcakes for mouths and nostrils, cut the corner off one side of the bag.
