Egg scramble with spinach and raspberries

This quick scramble with thick toast is one of the best meals to eat to lose weight.  

Healthy spinach, satisfying whole-grain toast, and protein-packed eggs are joined by superfood raspberries. The protein and fiber help you feel fuller longer and more energetic all morning.  

Ingredient

– 1 teaspoon canola oil – 1 ½ cups baby spinach (1 1/2 ounces) – 2 large eggs, lightly beaten – Pinch of kosher salt – Pinch of ground pepper – 1 slice whole-grain bread, toasted – ½ cup fresh raspberrie

Direction

Heat oil in a small non stick skillet over medium-high. Cook, stirring often, until spinach has wilted, 1-2 minutes. Place spinach upon a plate.

In that same pan, but cleaned, set the eggs over medium heat. Heat for about 1-2 minutes, until just set, stirring once or twice to make sure it is fairly even in its doneness.  

Season with salt, pepper, and spinach. Top the scramble with toast and raspberries.
