Curried Rice Salad

Gather Ingredients 2 cups cooked basmati rice, 1/2 cup diced red bell pepper, 1/2 cup diced cucumber, 1/4 cup chopped green onions, 1/4 cup raisins, 1/4 cup chopped cilantro, 2 tbsp curry powder, 2 tbsp olive oil, 2 tbsp lemon juice, salt, pepper.

Prepare Vegetables Dice red bell pepper, cucumber, and chop green onions and cilantro.

Mix Curry Dressing In a small bowl, whisk together olive oil, lemon juice, curry powder, salt, and pepper to make the dressing.

Combine Rice and Veggies In a large bowl, combine the cooked basmati rice with the diced vegetables, green onions, and raisins.

Add Dressing Pour the curry dressing over the rice mixture and toss to coat evenly.

Add Fresh Herbs Stir in the chopped cilantro for a fresh, herby flavor.

Taste and Adjust Taste the salad and adjust seasoning if necessary, adding more salt, pepper, or curry powder to taste.

Chill Salad Cover and chill the salad in the refrigerator for at least 30 minutes to let the flavors meld.

Serve Serve the curried rice salad cold or at room temperature. It pairs well with grilled meats or can be enjoyed on its own.
