Create Your Own Tacos with Chicken

This kid-friendly recipe keeps all of the ingredients separate so your kids can enjoy their tacos plain or make their own little tacos with favorite toppings. It's great to put into a bento box for a healthy school meal.

Ingredient

– 1 pound boneless, skinless chicken breast – ½ cup mild salsa – 2 cups chopped romaine lettuce – 1 cup shredded Mexican cheese blend – 8 corn tortillas, warmed and halved

Direction

Place the chicken in a large pot and add enough water to cover by two inches. Bring to a simmer.  

Reduce heat to maintain a low simmer and cook, for about 15 minutes, or until the thickest part of the chicken reaches 165 degrees Fahrenheit, according to an instant-read thermometer.

Place chicken on a clean cutting board. (Discard poaching liquid or save for another use.) When chicken is cool enough to handle, use two forks to pull into bite-sized pieces. Transfer to a bowl, then stir in salsa.

For make-your-own tacos, place tortillas, cheese, lettuce, and chicken in separate serving dishes.
