A funny take on a tuna salad sandwich, only without the bread; instead, this tuna salad and crackers recipe uses wheat crackers.
– 6 wheat cracker – 1 2.6-ounce pouch low-sodium light tuna – 1 tablespoon reduced-fat olive oil mayonnaise
– ½ cup red pepper strip – ½ cup cucumber slice – 1 single-serve sun-dried-tomato hummus dip
Mix tuna with mayonnaise.
Place on top of crackers. Serve with hummus and cucumbers and peppers.
