Clementine Sando (Japanese Fruit Sandwich)
Ingredients
– 2 slices of white bread
– 3 clementines, peeled
– ½ cup heavy cream, chilled
– ⅛ cup powdered sugar
– 1 tablespoon vanilla extract
Directions
Whisk heavy cream, powdered sugar, and vanilla extract in a large bowl.
Using an electric hand mixer or stand mixer beat heavy cream until it forms stiff peaks (about 1-2 minutes). Keep this aside.
To make sando, lightly whip some bread. Arrange the shaved clementines on top of the whipped cream
coat completely with more whipped cream. Top with another loaf of bread and press down gently.
Wrap the sando in plastic wrap and refrigerate for about 30 minutes before slicing.
This allows for a cleaner slice and really makes these Sandos taste better as they cool down.
Once the sando has cooled down, carefully remove the sando. So you can trim the edges of the bread, but I wanna eat it!
