Chocolate Vegan Zucchini Bread

Gather Ingredient 1 1/2 cups grated zucchini, 1 1/2 cups all-purpose flour, 1/2 cup cocoa powder, 1 tsp baking soda, 1/2 tsp baking powder, 1/2 tsp salt, 1/2 cup vegetable oil, 1/2 cup sugar, 1/4 cup maple syrup, 1 tsp vanilla extract, 1/2 cup non-dairy milk, 1/2 cup vegan chocolate chips.

Preheat Oven Preheat your oven to 350°F (175°C). Grease a loaf pan or line it with parchment paper.

Mix Dry Ingredient In a large bowl, whisk together flour, cocoa powder, baking soda, baking powder, and salt until well combined.

Mix Wet Ingredient In another bowl, whisk together vegetable oil, sugar, maple syrup, vanilla extract, and non-dairy milk until smooth.

Combine Wet and Dry Ingredient Gradually add the wet mixture to the dry ingredients, stirring until just combined. Do not overmix.

Add Zucchini and Chocolate Chip Fold in the grated zucchini and vegan chocolate chips, ensuring they are evenly distributed throughout the batter.

Pour Batter into Pan Pour the batter into the prepared loaf pan, spreading it out evenly.

Bake Bake for 50-60 minutes, or until a toothpick inserted into the center comes out clean. Let the bread cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.

Serve Slice and serve the chocolate vegan zucchini bread on its own or with a spread of vegan butter. Enjoy!
