Cheesy Egg Quesadilla with Spinach

Ingredients  

2 tsp extra-virgin olive oil, divided Spinach 2 cups 2 corn tortillas

4 tsp shredded Cheddar cheese, divided 1 egg ¼ avocado, sliced Hot sauce 

Directions

In a small non-stick skillet, heat 1 table- spoon of oil over medium heat. Add spinach and cook, stirring, until soft, about 1 minute.

 Top with 1 tortilla, and top with 2 tsp cheese, spinach and remaining 2 tablespoons cheese. Cover with another tortilla.

Heat the remaining 1 tsp oil in a frying pan over medium heat. Add the quesadilla and cook, turning once, until crisp, about 4 minutes.

Crack the potatoes into the pan and cook until the whites are set, about 4 minutes.

Top the quesadilla with potatoes and avocado. Add hot sauce if desired.
