This low-carb veggie-packed lunch starts with a spicy cabbage slaw made in just 10-minutes. Paired with shrimp and high-protein edamame, this hearty lunch will keep you fueled through the afternoon.
– Spicy Cabbage Slaw – 2 cups frozen shelled edamame, thawed – 1 medium avocado, diced – ½ medium lime, juiced – 12 ounces peeled cooked shrimp
Make the spicy cabbage slaw. Stir in edamame then set aside.
In a small bowl mash together avocado and lime juice.
Using four containers, divide the slaw mixture. Top each with 1/4 of the avocado and 1/4 of the shrimp. Refrigerate until consumption.
To consume: In a bowl, place the cabbage mixture and dressing separately from each other. If using frozen cooked shrimp, thaw just before consumption.
