This simple mix of baked oats will make you feel like you are having a cake breakfast and is very light. Just pop everything in your blender, toss, and enjoy!
– ½ cup rolled or quick oat – ¼ cup unsweetened almond milk – ½ ripe banana – 1 egg – 1 Tablespoon maple syrup, I used monkfruit maple syrup
– 1 Tablespoon peanut butter – ¼ teaspoon baking powder – Pinch of cinnamon – Pinch of sea salt – 2 Tablespoons chocolate chips
Preheat the oven to 350°F. Add all the ingredients except the chocolate chips to the blender .
Blend until fully combined. Stir in 1-2 tablespoons chocolate chips.
Pour the batter into a greased pan or ramekin. I used a small 8-ounce Le Creuset, but any 8-ounce ovenproof dish will work.
Top with fresh chocolate chips and bake at 350°F for 25 minutes or until a toothpick inserted comes out clean.
Let cool and stir in extra peanut butter, maple syrup and a splash of milk.
