Baked Breaded Eggplant Slice

Gather Ingredients You'll need fresh eggplants, eggs, flour, breadcrumbs, Parmesan cheese, olive oil, salt, pepper, garlic powder, and Italian seasoning for this tasty recipe. 

Prepare the Eggplant Slice the eggplants into ½-inch thick rounds. Sprinkle with salt and let them sit for 30 minutes to draw out excess moisture and bitterness. 

Set Up Breading Station Prepare three bowls: one with flour, one with beaten eggs, and one with a mixture of breadcrumbs, Parmesan cheese, garlic powder, and Italian seasoning. 

Bread the Eggplant Slices Dip each eggplant slice in flour, then in beaten eggs, and finally coat with the breadcrumb mixture. Press lightly to ensure an even coating.

Arrange on Baking Sheet Place the breaded eggplant slices on a baking sheet lined with parchment paper. Drizzle or spray olive oil over the top to help them crisp up. 

Bake Until Golden Bake in a preheated oven at 400°F (200°C) for 20-25 minutes, flipping halfway through, until the eggplant slices are golden brown and crispy. 

Cool and Serve Remove from the oven and let the eggplant slices cool slightly on a wire rack. This keeps them crisp and ready to enjoy.
