Air Fryer Chimichangas offer a lighter, yet equally delicious, alternative to the traditional deep-fried version of this beloved Tex-Mex dish. Crispy on the outside and filled with a savory mixture of seasoned meat,
beans, and cheese, these chimichangas deliver all the flavor and texture you love without the added oil. The air fryer is the perfect tool for achieving a golden, crunchy tortilla shell, making this recipe a healthier choice that doesn’t compromise on taste.
Ingredient – 2 cups cooked, shredded chicken (or ground beef, or a vegetarian filling) – 1 cup refried bean – 1 cup shredded cheddar or Monterey Jack cheese – 1/2 cup salsa – 1 teaspoon ground cumin
– 1 teaspoon chili powder – 1/2 teaspoon garlic powder – Salt and pepper to taste – 4 large flour tortilla – Cooking spray or olive oil – Optional toppings: sour cream, guacamole, additional salsa, chopped cilantro, diced tomatoes, shredded lettuce
Instruction 1. Prepare the Filling:In a large bowl, combine the cooked chicken (or chosen filling), refried beans, shredded cheese, salsa, cumin, chili powder, garlic powder, salt, and pepper. Mix until all ingredients are well combined.
Assemble the Chimichangas: – Lay a tortilla flat on a clean surface. Spoon about 1/2 cup of the filling mixture onto the center of the tortilla. – Fold the sides of the tortilla inwards, then fold the bottom over the filling and roll up tightly to form a burrito shape. Repeat with the remaining tortillas and filling.
– Preheat the Air Fryer:Preheat your air fryer to 400°F (200°C) for about 3 minutes. – Cook the Chimichangas:Lightly spray the outside of each chimichanga with cooking spray or brush with a bit of olive oil to help them crisp up in the air fryer.
Serve: – Carefully remove the chimichangas from the air fryer and let them cool slightly before serving. – Serve with your favorite toppings like sour cream, guacamole, extra salsa, chopped cilantro, and diced tomatoes.
